Ingredients:

  • 3 cups old-fashioned rolled oats
  • 1 cup mixed nuts (such as almonds, pecans, and walnuts), roughly chopped
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup dried fruits (such as raisins, cranberries, or apricots), chopped
  • 1/4 cup honey
  • 1/4 cup pure maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Optional Add-Ins:

  • 1/2 cup seeds (flaxseeds, chia seeds, or sunflower seeds)
  • 1/2 cup chocolate chips or cocoa nibs (for a sweeter variation)
  • 1/2 cup dried berries (blueberries, strawberries, or goji berries)

Instructions:

  1. Preheat the Oven: Preheat your oven to 325°F (160°C). Line a large baking sheet with parchment paper.

  2. Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, mixed nuts, and shredded coconut. If you're adding seeds, this is the time to mix them in as well.

  3. Prepare the Sweeteners: In a small saucepan over low heat, warm the honey, pure maple syrup, and melted coconut oil. Stir until they are well combined. Remove from heat and stir in the vanilla extract, ground cinnamon, and salt.

  4. Coat the Dry Ingredients: Pour the sweetener mixture over the dry ingredients in the mixing bowl. Use a spatula to thoroughly coat the oats and nuts with the sweet mixture. Ensure everything is evenly coated.

  5. Spread on Baking Sheet: Spread the granola mixture evenly onto the prepared baking sheet. Press it down slightly with the back of a spatula to create a compact layer.

  6. Bake and Stir: Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the granola turns golden brown. Be sure to stir the granola every 10 minutes to ensure even baking.

  7. Add Dried Fruits: Remove the granola from the oven and immediately sprinkle the dried fruits over the top while it's still warm. Press them gently into the granola with a spatula.

  8. Cool: Allow the granola to cool completely on the baking sheet. As it cools, it will become crispy.

  9. Add Optional Ingredients: Once the granola has cooled, you can add any optional ingredients like chocolate chips, cocoa nibs, or additional dried berries.

  10. Store: Transfer your homemade Honey Harvest Granola to an airtight container or glass jar. It will stay fresh for several weeks at room temperature.
