Raw honey can be dark, light, clear or can contain natural sediment. Depending on the nectar in season and in the local area raw honey will often crystallise over time, and in cooler temperatures, if you'd prefer runny honey place jar in hot water, a warm oven that is cooling or leave outside in the sun for an hour or so (away from ants!)
